Sweet Potato Burgers

My favorite veggie burgers!

Sweet Potato Burgers

Gluten-Free | Vegan

Ingredients:

  • 2lbs sweet potatoes, peeled, cut into large chunks

  • 1 teaspoon garlic powder

  • 1 tablespoons olive oil

  • To taste kosher salt & pepper

  • 1/2 cup pumpkin seeds

  • 3 scallions, minced

  • 1 (15oz) can cannellini beans

  • 2 garlic cloves

  • 3 tablespoons tahini

  • 1  cup rolled old fashioned oats 

  • 2 tablespoons smoked paprika 

  • TT salt & pepper 

  • 1/4 cup flour, as needed

Procedure:

  1. Preheat oven to 425

  2.  Scrub peel and small dice sweet potatoes. In a large bowl, toss sweet potatoes with garlic powder, olive oil, salt & pepper. Roast for about 30 minutes or until tender

  3.  Meanwhile, pulse pumpkin seeds for a few seconds to break down into smaller pieces. Add to a large mixing bowl. 

  4.  Mince ½ of the scallions and  add to the mixing bowl. 

  5.  In a food processor add remaining scallions, cannellini white beans, garlic cloves,  and tahini. Once completely smooth, add to the  mixing bowl. 

  6.  When the sweet potatoes are done cooking, mash and let cool. 

  7.  Once the sweet potatoes are cool, add to a large mixing bowl with bean mixture. Add ground flax seeds, rolled oats, smoked paprika, salt & pepper. Fold until all ingredients are incorporated. 

  8.  Test the mix to see if it will form a patty. It will be a little sticky but should hold together if rolled into a ball. If needed, add a little flour at a time until the mixture becomes firm. Portion into 8-10 patties.

  9. Bake for 20-25 minutes (flipping the burgers half way through) or until golden brown
