Meatless Tomato Sauce

This meatless tomato sauce is so delicious even your Nonna will want the recipe!

Meatless Tomato Sauce

Gluten-Free | Vegan

Ingredients:

  • 1 tablespoon olive oil 

  • 8oz mushrooms

  • ½ cup raw walnuts 

  • 1 cup riced cauliflower 

  • 1 tablespoon tomato paste 

  • 1 teaspoon dry Italian seasoning 

  • 1 white onion, small dice

  • 4 garlic cloves, minced

  • 1 28oz can crushed tomatoes 

  • 1 28oz can tomato puree

  • 1 bunch basil, chiffon 

Procedure:

Add mushrooms to a food processor along with walnuts- pulse until a coarse mix is made (think ground beef pieces). Add to a bowl with cauliflower rice and mix well.

Heat a large pot up over medium-high heat. Once hot add olive oil swirling to coat the bottom of the pan. Add the meat mix, stirring constantly for about 5 minutes. Add a large pinch of salt, Italian seasoning, and tomato paste. Mix well. Cook for another 8 minutes. Take out of the pot and set aside.

In the same pot add another tablespoon of olive oil. Add onions, garlic, and a large pinch of salt. Cook until the onions are translucent, about 5-8 minutes.

Then add crushed tomatoes and tomato puree. Lower the heat to a gentle simmer. Cook for about 1 ½ hours (you want to reduce it by at least a quarter).

Once reduced add “meat” mix back into pot stirring until well combined. Adjust to taste with salt and pepper. Stir in basil. Serve over roasted spaghetti squash or your favorite pasta!
